Migration Taco is Rodeo, New Mexico’s first and awesomest vegan taco truck! After getting our start in Denver, we relocated to Portal, Arizona in 2020 and reopened in Rodeo in July 2021.

In addition to a dazzling array of nontraditional vegan tacos, our regular menu often features nachos, mac & cheese, and breakfast burritos. We also offer groundbreaking rotating specials that include bulgogi burritos with kimchi fried rice (wow!) and Cincinnati chili burritos (what?!). Waffles as taco shells? Yes. Brunch quesadillas? Sure. Cheeseburger nachos with pickles and ketchup aioli? Of course. There are no rules! You might even encounter a pizzachanga on occasion. The pizzachanga is the groovy lovechild of pizza and a chimichanga: pizza ingredients stuffed in a flour tortilla and fried, sometimes served with dipping sauce (favorites include pepperoni, sausage and peppers, giardiniera, and dill pickle with ranch dressing).

We make all of our vegan “meats” (garbanzo chorizo, seitan carne asada, barbecue and buffalo wings, smoky maple bacon, bulgogi-style beef, pepperoni, sausage) and “cheeses” (house cheese sauce, mozzarella, macadamia cotija) in house, from scratch. Our green chile is not to be missed (it’s made with Hatch chiles, of course).

We use local and organic ingredients as often as possible, and our serviceware is all compostable. We compost everything we can and are doing our best to create as little waste as possible.

Our drip and cold-brew coffee is always made with certified organic and bird-friendly beans (from Birds & Beans).

Your food is made fresh when you order it. It won’t necessarily be fast, but it will be awesome.
